How to Roast Spaghetti Squash

Start by cutting the squash in half long-ways using a large kitchen knife.  Spaghetti squash can be very tough to cut through so work slowly and carefully!

Next, use a soup spoon to remove the seeds.  Then place both halves, flesh-side down in a parchment lined baking dish.  Add 1- 1 1/2 cups of water to the pan.  This will allow the squash to steam while it roasts, cooking it more evenly.  Bake at 400 degrees Fahrenheit for 30-40 minutes or until “spaghetti” can easily be peeled using a fork.

After the squash has finished roasting, use a hot pad or folded dish towel to handle the squash (it will be very hot) and use a fork to pull out the “spaghetti.”

Voila!  Now you have nutritious noodles to enjoy!
