Spanish Rice

Delicious and easy Spanish rice, filled with peas and diced tomatoes with a fraction of the sodium of the store-bought variety!

Spanish Rice

  • 1 cup basmati rice
  • 1 14.5 oz can petite diced tomatoes (don’t drain)
  • 1 c frozen peas
  • 1 c vegetable broth
  • 1 c water
  • juice of one lime (2 1/2 tbsp)
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp jalapeno salt
  • 1/4 tsp Cajun seasoning
  • 1/4 tsp black pepper
  • 1/4 tsp chili powder


1. Place all of the ingredients in a medium sauce pan and stir together.
2. On the stove top, heat on high until mixture comes to a boil, then reduce heat to low and cover. Continue cooking for about 30 minutes (or until rice is tender), stirring occasionally.
3. Serve.
