Sometimes the simplest things are the best things!
I have been eating 100% raw for three days now and I’m feeling great! I made the decision to eat raw for a few weeks so that I can reset my taste buds and experiment with new foods. This salad is a new favorite! Serve it as a pre-dinner salad for two, or do what I do, and make up a whole batch and keep it all to yourself for lunch! You can throw this healthy salad together and be making “Mmmmm!” sounds after your first bite in under 10 minutes! Enjoy!
Fruit & Greens Salad
- 6 c mixed greens
- 1 apple, chopped
- 1 Asian pear, chopped
- 3-4 figs, chopped
- 1/2-1 c blueberries
- lemon juice or artisan vinegar as desired
- 2 tbsp chopped walnuts (optional)
1. Place all ingredients in a bowl and toss.
