Ready for some delicious “fake-away”? Then THIS is the recipe you’ve been looking for!
I am going to be honest, Chris and I have been on our vegan journey for long enough that neither of us can really remember what kung pao tastes like… at least not enough for me to confidently call this kung pao–hence the “Kind of.” However, I can say that it is absolutely a tasty Asian meal worthy of a little white take-out box!
For me, this summer has been all about mangoes! They are so sweet and juicy, they make the perfect summer snack! I thought I’d try a summery take on my classic spring rolls and created these super-fresh “summer rolls” with oyster mushrooms, red bell pepper, raw zoodles, red onion, cilantro, and of course–mangoes! All rolled up and dipped in my avocado-lime dipping sauce!
Lo mein, lo lo lo lo Lo Mein! (sung to the tune of “Lola” by The Kinks) I’ve been feeling quite musical while posting lately– it must be all of the sunshine and fresh seasonal fruits and veggies getting to my head!
